Berry Quinoa and Pecan Salad with Honey-Mustard Dressing

This salad will simplify your life this summer.

Fresh raspberries & blueberries, toasted pecans and quinoa all tossed in a honey mustard-vinaigrette is a beautiful combo, but something straight up magical happens when you pile that goodness on top of mixed greens. The quinoa soaks up some of the dressing, and each highly textured bite bursts with bright, fresh flavor.

It’s seasonal salad perfection.

Berry Quinoa and Pecan Salad with Honey-Mustard Dressing

3/4 cup olive oil
1/4 cup fresh lemon juice
2 tsp honey
1 Tbsp Dijon mustard
1/4 tsp salt (optional)

2 cups cooked quinoa
1/2 cup chopped pecans, toasted
4 cups mixed greens
1 1/2 cups fresh blueberries
1 1/2 cups fresh raspberries
optional: 2 medium avocados, peeled, cored and diced

In a blender or mason jar combine all dressing ingredients and shake well. Store in refrigerator.
For the salad toss all ingredients together in a large salad bowl. Pour desired amount of dressing over top and toss. Serve immediately after adding dressing.
