Brussels Sprouts Avocado Caesar Salad

Simple, fresh, and perfect for you Brussels Sprout lovers!

Today I bring you a powerhouse of a salad. We are leaving behind the traditional romaine for hearty and nutrient rich Brussels Sprouts. Then we’re tossing it with a nice creamy dressing, and topping it with some toasted up croutons. Yum.

An easy spin on a classic.

Brussels not only pack a huge flavor punch, but contain sulforaphane, a chemical believed to contain anti-cancer properties, and are also a great source of belly filling plant based protein and fiber and immune boosting vitamin C. There’s no telling what will happen when you put this crispy, crunchy, and savory salad down on the table.

Brussels Sprouts Avocado Caesar Salad

4 cups thinly sliced Brussels sprouts

1 cup finely sliced kale

1 tablespoon lemon juice

2 teaspoon chives

2 teaspoons finely chopped parsley

avocado dressing:

1 ripe avocado, pitted
1-2 cloves garlic, minced
1 tablespoons fresh lemon juice
1 teaspoon raw apple cider vinegar
3/4 cup water
1 teaspoon Dijon mustard
1/2 teaspoon sea salt
2 tablespoons nutritional yeast

Place Brussels sprouts, kale, chives and parsley in a salad bowl.  Squeeze fresh lemon juice over your greens and gently toss. Set aside and make your dressing. Combine all of the dressing ingredients in a high-speed blender, and blend until completely smooth. Pour desired amount over greens and toss well to coat. Garnish with lots of fresh ground black pepper and croutons.
