Chia Seed Porridge

As I’m writing this, I feel almost euphoric!

This breakfast got me through one of the busiest weeks of my life!

All that is in this amazing little porridge is a whack load of spices, some coconut products & chia seeds.

It goes like this: throw ingredients in your high-speed blender & you’ll have a gourmet raw food meal in minutes! (All right, I may have simplified that process a little but seriously – it’s pretty much that easy.) You can even make it the night before and grab it as you are running out the door the next morning!

Chia seeds are loaded with omega-3’s (EFA’s), which most people just don’t get enough of.

And of course, with any raw plant food you’re gonna a TON of antioxidants & phytonutrients.

One of the many, many things that I love about chia seeds is their insoluble fiber.

When you add water, they gel up. This is exactly what happens when you eat them too, and that’s why they’re great for keeping you hydrated, satiated and regular. Yes, you heard me correct — they keep things moving and that is a beautiful thing.

Chia Seed Porridge

Chia Seed Porridge

{makes 2 servings}
2/3 cup chia seeds
1 cup coconut water
1 cup coconut milk {regular or light}
2 tsp. pumpkin pie spice {optional but awesome}
1 tsp. cinnamon
1 tsp. vanilla extract
2 tbsp. real maple syrup
shredded coconut, berries or diced apple to garnish

In a Vitamix or other high speed blender or food processor, combine all the ingredients and blend until smooth. Either eat immediately or transfer to a glass container and chill for 20 minutes or overnight before serving. Top with your choice of garnish!
