Dark Chocolate Crispy Treats

Oh my goodness gracious.

It’s been many years since I’ve indulged in a rice crispy treat. That is until now.

This childhood favorite has gotten a makeover!

In my opinion, this version beats traditional rice crispy treats by a landslide. If I didn’t tell you, I bet you wouldn’t even know they were healthy. Everyone in my family agrees, even Regan (my daughter) who has the pickiest palate of us all.

But really, who doesn’t like dark chocolate?

If you want to make a cute, sweet and tasty dessert for a Valentine’s party (or for no reason at all) make these today. They’re easy to pull together and require no baking! Just a little patience while they cool.

*Disclaimer: while they are certainly healthier than the traditional version, you should NOT eat the whole pan in one sitting. Although it’s hard not to.

Dark Chocolate Crispy Treats recipe
1/2 cup (real) maple syrup
1/2 cup brown rice syrup
1/2 cup almond butter
1/2 cup chopped bittersweet chocolate (I use Green & Black 80%)
1 tablespoons unrefined coconut oil
4 cups crisp rice cereal

For the chocolate topping:
2 tablespoons unrefined coconut oil
1/2 cup chopped bittersweet chocolate (I use Green & Black 80%)

Line a square pan with a piece of parchment paper. In a large saucepan, bring the maple syrup and rice syrup to a rolling boil for 1 minute, stirring frequently with a wooden spoon. Remove from the heat and stir in the nut butter, 1/2 cup chocolate, and 1 tablespoons coconut oil until everything is smooth and the chocolate is melted. Fold in the rice cereal and pack the mixture firmly and evenly into the lined pan. In a small saucepan, melt the remaining 1/2 cup of chocolate and 2 tablespoons coconut oil together over very low heat, stirring constantly just until melted (be careful not to burn the chocolate). Pour the chocolate mixture over the rice mixture, spreading it smooth. Let the bars set in the refrigerator until firm. Lift the parchment out of the pan and cut into squares. Enjoy!
