Inside Out Almond Joy Bites

Happy Valentine’s Day!

Today, I thought it was appropriate to share this super simple sweet that has become a tradition in my house. All you need for these almond joy bites are four common ingredients and a saucepan and boom — you’re instantly a candy-making genius.

Because sometimes you feel like a nut.

Simply melt dark chocolate with coconut oil, add in some almonds, drop by the spoonful on a baking sheet and finish with a sprinkle of shredded coconut. Pop it in the freezer for 15-minutes and you’ve got yourself a sweet pile of chocolate heaven. Dark chocolate is packed with antioxidants and chemical compounds that have been shown to improve both mood and cognitive health. In short, these Valentine’s Day sweets will make you happier & smarter. I can’t say the same for drug store candy.

Inside Out Almond Joys
30 Servings

12 ounces organic dark chocolate chips (at least 70% cacao)
1 tbsp unrefined coconut oil
2 1/2 cups raw almonds
1/3 cup unsweetened shredded coconut

Place the dark chocolate and the coconut oil in a small saucepan over low heat, until melted. Stir well to combine.

Meanwhile, line a baking sheet with parchment paper.

Add almonds to the melted chocolate and stir to combine. Use a spoon to drop small, even clusters (containing about 4 to 5 almonds each) onto the parchment paper. The number of clusters you make should be equal to your serving size.

Sprinkle coconut over-top of each cluster immediately. Transfer to the freezer until the clusters are set, about 15 minutes.

Remove from the freezer and enjoy!

Notes:
No almonds? Use hazelnuts, peanuts or dried fruit
No Coconut flakes? Use hemp seeds instead.
