Mixed Greens with Avocado, Grapefruit, Pistachios + Balsamic Citrus Dressing

Goodness gracious is it spring yet? I’m sure ready for it. Who’s with me?

It’s hard to believe that after weeks months of eating soups and roasted vegetables in an effort to keep warm, I find myself suddenly craving a big salad. I think it has something to do with salad’s fresh, green, brightness; something that seems to be lacking on cold winter days.

This salad is a cinch to make, looks gorgeous on the plate and is cleansing to boot….

Hidden among the citrus coated greens lies a bounty of nutrients your body needs to rehydrate and recharge.

(We’re talking about loads of Vitamin C, fiber, healthy fats and phytonutrients)

In addition, the textures are sure to please; crisp greens, juicy citrus, crunchy pistachios and creamy avocado.

Mixed Greens with Avocado, Grapefruit, Pistachios + Balsamic Citrus Dressing recipe

Balsamic Citrus Dressing:
1/2 cup olive oil
1/4 cup balsamic vinegar
1/4 cup freshly squeezed orange juice
1/4 cup freshly squeezed lime juice
Salt and Pepper to taste

Make the vinaigrette – combine olive oil, balsamic vinegar, orange juice, lime juice in a small bowl and whisk together. Season to taste with salt and pepper.

Salad:
4 cups mixed salad greens, washed and dried well
1 red *grapefruit, peeled and sectioned
1 avocado, skinned, pitted, and cut into thin slices
½ cup toasted + salted pistachios

1/2 red onion, peeled and sliced thin
Place salad greens in a large bowl, add just enough vinaigrette to coat (save leftover dressing for a later use). Top with the grapefruit and avocado slices, red onion, and finish with the pistachios. Serves 2-4
