Goodness gracious is it spring yet? I’m sure ready for it. Who’s with me?
It’s hard to believe that after
weeks months of eating soups and roasted vegetables in an effort to keep warm, I find myself suddenly craving a big salad. I think it has something to do with salad’s fresh, green, brightness; something that seems to be lacking on cold winter days.
This salad is a cinch to make, looks gorgeous on the plate and is cleansing to boot….
Hidden among the citrus coated greens lies a bounty of nutrients your body needs to rehydrate and recharge.
(We’re talking about loads of Vitamin C, fiber, healthy fats and phytonutrients)
In addition, the textures are sure to please; crisp greens, juicy citrus, crunchy pistachios and creamy avocado.
Fresh, clean & classic.

1 avocado, skinned, pitted, and cut into thin slices
