If you think salads are just for spring and summer—toss that crazy idea into the cold and try this one!
I’m thrilled to inform you that this salad does serious wonders for your taste buds. The mixed greens and kale combo is a wonderful hearty salad base and its earthiness is perfectly complemented by sweet juicy oranges. There’s a little avocado for creaminess, cashews for crunch, and a lemony dijon dressing brightens the whole thing up!
Light, healthy, and deliciously refreshing.
I like the idea of serving this salad as a light cleansing lunch. In addition to being outrageously delicious, this salad happens to be a nutritional powerhouse. It’s packed with fiber, antioxidants, healthy fats and essential vitamins and minerals.
2 large oranges, segmented
1 large ripe avocado, diced
1/3 cup cashews, toasted
6 cups (or more) of spinach, mixed greens, arugula or baby kale
1/4 cup olive oil
1/4 cup lemon juice
2 tsp. dijon mustard
2 tsp. honey, agave nectar or maple syrup
1 small clove garlic minced sea salt and black pepper
In a small bowl whisk the olive oil, lemon juice, dijon, honey and garlic until well blended. Prepare both oranges by cutting off the rind and outer membrane and slicing into wedges. Place greens in a big salad bowl and add the oranges, avocados and cashews. Toss with just enough dressing to coat. Season with sea salt and freshly ground black pepper to taste.
