Potato Salad with Arugula, Red Onions & Almonds

Potato salad is a “goes-with-everything” summer dish.

Yet, the classic versions of potato salad can easily derail your diet with extra calories and fat. I love this mayo-free version that is made fun and unique with the addition of arugula.

Arugula offers twice as much fiber as other greens, and it’s packed with disease-fighting antioxidants, potassium, and important phytochemicals that are very helpful in regulating your blood sugar and giving your skin a Gwyneth-like glow.

It’s simple, beautiful and unbelievably delicious.

As far as salads go, this one is a serious crowd pleaser. The combination of potatoes, peppery arugula, crisp red onion, and crunchy toasted almonds is heavenly, and the tangy and slightly sweet taste of the balsamic vinaigrette adds the perfect finishing touch to this bright salad.

I love the idea of serving this as a side dish at a casual summer dinner party with a crisp white wine.

The whole shebang only requires about 20 minutes of hands-on time, and it’s more than worth it. Trust me. Plus, with all the seratonin-boosting nutrients in potatoes, this salad is bound to leave your guests feeling totally cheerful & content.

It’s easy and light, and surprisingly satisfying.

Potato Salad with Arugula, Red Onions and Almonds recipe
1 pound potatoes, scrubbed clean
2 cups arugula, washed and dried
1/4 red onion, very thinly sliced
1/2 cup toasted slivered almonds or walnuts, roughly chopped

Balsamic-Mustard Vinaigrette
2 tbsp. balsamic vinegar
1 tbsp. dijon mustard
1 tsp. maple syrup, honey or agave
1/4 cup extra virgin olive oil
Salt and Pepper

Fill a large pot with cold water. Add the potatoes and bring to a boil. Reduce the heat to a low boil and cook until they can easily be pierced with a knife, about 12-15 minutes. Slightly cool the potatoes under running water to allow easy handling. Cut the potatoes into 1/2-inch pieces and place in a serving bowl. In a small bowl, whisk together all the dressing ingredients, until thoroughly blended. Pour the dressing over the potatoes and mix well. Add the arugula, red onion and almonds and gently mix.
