Strawberry Coconut Overnight Oats

Friends, this is the perfect solution for hectic mornings.

From a foolproof perspective, it doesn’t get any easier than this. All you have to do is toss oats, chia seeds, coconut milk, water and a dash of maple syrup into a large bowl. Divide among four mason jars and top with fresh strawberries, screw on the lid and place in the fridge and boom, your done.

I’m partial to dressing up my oats with shredded coconut & chopped walnuts.

In addition to their deliciousness and convenience, these overnight oats are packed with fiber, healthy fats and 12 grams of protein per serving. For those of you that think eating cold oatmeal sounds disgusting, I hear you. However, I am very confident that once you try this recipe, you’ll be just as hooked as I am!

Strawberry Overnight Oats

1 1/2 cups Rolled Oats (do not use quick oats)
1 1/2 cups Organic Coconut Milk (from a can)
2 tbsp Chia Seeds
1 tbsp Maple Syrup
3/4 cup Water
2 cups Strawberries (sliced)

Combine oats, coconut milk, chia seeds and maple syrup together in a large glass container. Add water and stir well to evenly mix. Cover and store in the fridge overnight. Remove from fridge. Use single-serving size jars (250 mL or 500 mL in size) and place a few spoonfuls of the oat mixture in the bottom of each. Then add a layer of diced strawberries. Repeat until all ingredients are used up. Store in the fridge up to 4 days or until ready to eat.
