2 Simple Super Bowl Dips!

The Super Bowl is probably the greatest eating day of the year aside from Thanksgiving, and one can never have too many recipe ideas for the occasion.

I realize some of you will be entertaining or celebrating solo on the couch (respect) during the big game, and you may be in need of some delicious inspiration.

You’ve obviously come to the right place.

Mexican Street Corn Dip

Have you ever had Mexican street corn? If so, you know it’s outrageously delicious.

If not, it’s basically grilled corn smothered in an epic blend of mayonnaise or Mexican crema, chili powder, and cotija, and usually served with fresh limes and a sprinkling of cilantro.

This dip has the same amazing flavor profile of said street corn, except it’s lighter and fresher thanks to diced chiles, no mayo (because I don’t like it), and lots of fresh cilantro. Each bite is a flavor explosion that’s smoky, sweet, and slightly spicy with a refreshing citrus tang.

4 cups organic fresh or frozen corn
1 tablespoon olive oil
juice from one lime about 2 tablespoons
1/2 cup plain organic greek yogurt
4 ounces organic feta cheese
1 jalapeño pepper chopped (leave the seeds in for extra spice!)
1/4 cup red onion, chopped
2 cloves garlic minced
1 teaspoon chili powder
½ teaspoon ground cumin
1/2 tsp. smoked paprika
Salt, to taste
1/2 cup fresh cilantro chopped
2 tablespoons Franks red hot sauce or your favorite wing sauce

Prepare corn according to package instructions. Once corn is steamed/dethawed, heat in a large skillet on medium high heat with the olive oil. I cooked it for about 7-8 minutes until it was slightly browned. Toss with all other ingredients. Serve as a side dish or as a dip with tortilla chips.

Black Bean Avocado Dip

2 -3 avocados, diced
1 large tomato, diced
¾ cup of sweet onion, finely diced
2 15 ounce cans of black beans, drained and rinsed
¼ cup of cilantro
zest of 1/2 a lime (about 1 teaspoon)
Juice of 1 lime, about 2 tablespoons
1/4 teaspoon of cumin
2 cloves of garlic, minced
2 tablespoons of olive oil
Salt and pepper to taste

Gently combine all ingredients in a large serving bowl. Enjoy!
