Peanut Butter Coconut Cups with Dark Chocolate
It’s no secret: At Halloween, temptations are everywhere and it can be downright scary!
Whether the candy you choose is jumbo size or a mini fun-size, both are just full of sugar, fat, additives & empty calories.
Today, I am thrilled to share with you one of my favorite healthy variations on the classic Reese’s Peanut Butter Cup!
These are just plain amazing.
It’s the straight up chocolate & peanut butter filled goodness that I know you will fully appreciate.
You may be like: “Oh my goodness! This is healthy?” to which I say: “Yes, yes they are.”
Dark chocolate, organic peanut butter and coconut — all these components come together to create something so beautiful, so delicious … so right.
Stash them in your freezer and pull one out when your Halloween candy craving hits. You’ll be glad you did.
Dark Chocolate Peanut Butter Coconut Cups Recipe
1 cup unsweetened coconut flakes
3/4 cup rolled oats
1/4 cup real maple syrup
2 teaspoons pure vanilla extract
1/2 cup organic creamy peanut butter
1/4 cup melted coconut oil
2 dark chocolate bars {I like Green & Black}
For the cups: toss all the ingredients {except dark chocolate} in your food processor and pulse until it becomes a dough like consistency. If it’s too dry, add a bit more peanut butter. Press into lined mini cupcake tins, but leave a bit of room on the top to pour the chocolate on. Melt the chocolate bars in a small saucepan over very low heat. Pour the dark chocolate on top and place them in the fridge overnight. Eat in moderation.
