My Favorite Winter Salad + Almond Lime Dressing
Happy New Year everyone!
It’s been one of those weeks full of craziness & noise at my house since the kids have been home from school and we have been celebrating & visiting with friends and family.
Given the time of year, today’s recipe is all about leafy greens + good digestion + healing.
So, how about a quick little shout-out to a most virtuous salad of nourishing + delicious greens?
Fresh green salads mean easily digested carbs, no nasty highs & lows, because something this happy can’t bring you down.
In addition, when you incorporate more plants into your diet, you gradually begin to crowd out processed foods. Cutting back on processed foods, fast foods, meat, dairy, white sugar & white flour – then adding in lots of fresh organic greens and vegetables is the surest way to detox (and stay detoxed) and more living plant-based energy & live enzymes means more good feelings and good moods! yeah baby.
Simple Winter Kale Salad
1 1/2 cups each shredded purple cabbage
2 cups loosely packed, chopped kale, baby kale or leafy green of your choice
1 1/2 cups shredded carrots
2 scallions , finely sliced
1 cup chopped flat leaf parsley
Wash and shred the cabbage (you can use a food processor attachment for this if you like) and chop the kale as finely as possible. Place in a large bowl. Shred the carrots either with a food processor or on a box grater. Add to the cabbage. Finely slice the scallions into rings. Wash and chop the parsley. Add to the bowl and toss with plenty of almond lime dressing. I like to let this salad marinate for 20 minutes or so before serving.

And this dressing is a grand slam. I make big batches of this and it doesn’t stick around long. We use it on salads, soba noodles & even as a dip for raw veggies – so give your salad a generous coat!
almond lime dressing recipe
1 garlic clove, minced
1/4 cup raw almond butter
2 tablespoons fresh lime juice
1 1/2 tablespoons tamari
2 tablespoons water
2 teaspoons maple syrup
1 teaspoons toasted sesame oil (optional)
Prepare salad dressing by adding all the ingredients into your food processor or blender and process until smooth.
