Welcome! I’m so excited to share with you my health tips and secrets plus delicious plant-based recipes with a twist of adventure and inspiration. I’m a 40-something year old mom and wife who lives in coastal Maine.
I love to get creative in the kitchen while listening to salsa music and sipping good red wine. I also love impromptu dinner parties, farmers markets, veggie sushi, French style, road trips and lazy days at the beach.
I’ve been vegetarian for over a decade, my husband and two kids are not entirely, but my recipes here are. I post here to help motivate my creative culinary abilities while hopefully teaching all of you a few tips along the way. I am constantly seeking easy and delicious ways to stay healthy and youthful in spirit so come along and join in the journey with me!
EDUCATION
I received my four-year undergraduate degree from the University of Rhode Island.
During this time, I studied abroad in Florence, Italy — it is beyond impossible to describe my study abroad experience. I mean, how could I compile the most exciting, thrilling, and eye opening months of my life into just a few sentences?
Let me try.
My passion for food and culture exploded while living in Italy. I was completely amazed by the pride, respect and reverence for local grown produce and regional specialties as well as the emphasis on family meals and rituals.
Following my graduation, I relocated to San Diego, CA and headed back to school to learn everything I could about nutrition, health and wellness.
I completed a 2-year program (instructed by many of the top leaders in the health and wellness field) and received my certification as a Nutrition Counselor.
In addition, I completed a 1,000 hour program and received my certification as a Holistic Health Practitioner. My education included advanced nutrition, anatomy/physiology, herbology, oriental health principles and practices and concluded with a 6 month clinical internship.
In 2011, I received my certification in Plant-Based Nutrition from Cornell University and I continue to attend conferences and seminars on a regular basis.
