Caeser Salad Dressing (vegan)

This Caesar salad dressing is packed with plant based nutrients. Instead of egg yolk and cheese, this dressing gets it’s creaminess from cashews, and flavor from fresh lemon, garlic, capers and mustard.
This is so simple. Ready?
Place everything in the blender, then blend, blend, blend! It gets even thicker as it just hangs out waiting for you to use it. If you aren’t using right away, store in an airtight container in the fridge and it will last for about a week. You can use this as a delicious salad dressing, a replacement for mayonnaise or tangy dip for a fresh vegetable platter.
It’s creamy, flavorful and downright ridiculously good!
Caesar Salad Dressing
1/2 cup raw cashews
1/4 cup extra virgin olive oil
1/4 cup water (plus a bit more to create your desired consistency)
2 small cloves garlic, minced
2 tbsp. lemon juice
1 tbsp. apple cider vinegar
3 tsp. capers
2 1/2 tsp. Dijon mustard
3/4 tsp. pepper
1/2 tsp. salt
Place all ingredients in a high-speed blender and slowly increase the speed from low to high. Blend until dressing is completely smooth and creamy adding more water until you reach your desired consistency.
