Coconut Blondie Bars

A perfect on-the-go breakfast or snack.

I’ve mentioned that baking is definitely not my strong suit and based on my recipe archives, it’s pretty clear that I don’t do much of it. Which is why recently, my daughter dramatically professed how scarred she is by the lack of baked goods in our house and continued to share that normal mom’s bake treats for their kids.

Come again?

In an attempt to redeem myself, I pulled out my baking powder and fully prepared myself for the potentially disastrous consequences. I’m very pleased to inform you that not only did these bars turn out perfect on the first try, they are super simple and delicious. Better still, they are made with chickpeas, creamy almond butter, heart healthy coconut and each bar packs a respectable amount of protein and fiber.  Just FYI, the chickpea flavor is non-existent here, so even if you’re not a die-hard bean fan, I think you’ll enjoy these.

Truly a novice baker’s dream recipe.

Coconut Blondie Bars

3/4 tsp. coconut oil
2 cups canned chickpeas (rinsed and drained)
1/2 cup creamy almond butter
1/4 cup pure maple syrup
1/2 tsp cinnamon
1/4 tsp sea salt
1/4 tsp baking powder
1/4 tsp baking soda
1/3 cup unsweetened shredded coconut (plus extra for garnish)

Preheat oven to 350 degrees F and brush a baking dish with coconut oil (use an 8×8 pan for 16 blondies). Add all ingredients to a food processor and process until smooth. Be patient, you’ll need to pause and scrape down the batter several times. Spread the batter evenly into the pan. (The batter will be very sticky, so brushing a spatula with coconut oil first will help.) Sprinkle extra coconut over the top and press in gently. Bake for 20-25 minutes or until toothpick comes out clean and edges are slightly browned. Let cool for 20 minutes, then cut into squares. Enjoy!

    I’m extremely curious what is the purpose of baking soda and powder in this recipe? Frankly it sounds so crazy that I want to try it just to see what happens! If kiddo approves must be good!
