Dark Chocolate Peppermint Patties

Do you remember the Peppermint Pattie commercials from the 80′s?
“When I eat a York Peppermint Pattie, I get the sensation…”
It hit me the other day that I miss the sensation. You know what I am talking about.
Creamy & Minty. Soft & Chewy.
So I decided to recreate them and let me tell you, I can hardly take it. They taste so much like the real deal. After you try three one of these, you may have to close your eyes and not speak.
Dark Chocolate Enrobed Perfection.
Bonus! There are no additives, no preservatives and only a handful of ingredients. But the BEST thing about these is that they are nutrient-dense, they satisfy you with their healthy fats, and they leave you with fresh breath! Honestly, what more could you want?
Dark Chocolate Peppermint Patties recipe
2/3 cup dried unsweetened shredded coconut
2/3 cup raw cashews
2 tablespoons melted coconut oil
3 tablespoons maple syrup
2 tsp peppermint oil
Pinch of salt
2 bars dark chocolate (I prefer Green & Black 85%)
Blend all ingredients (except dark chocolate) together in your food processor until smooth. Roll into balls with your hands and flatten into patties. Set them on a baking sheet lined with parchment paper and place in the freezer for maybe 20 minutes. While patties are setting, melt your chocolate bars in a saucepan over low heat. Finally, dip your frozen patties in the chocolate sauce and place back in the freezer for 15 minutes or so until they are set. These can be stored in an airtight container in the fridge or freezer.
