Orange, Avocado & Cashew Salad with Lemon Dijon Vinaigrette

I’m thrilled to inform you that this salad does serious wonders for your taste buds. The mixed greens and kale combo is a wonderful hearty salad base and its earthiness is perfectly complemented by sweet juicy oranges. There’s a little avocado for creaminess, cashews for crunch, and a lemony dijon dressing brightens the whole thing up!

Orange, Avocado & Cashew Salad with Lemon Dijon Vinaigrette
2 large oranges, segmented
1 large ripe avocado, diced
1/3 cup cashews, toasted
6 cups (or more) of spinach, mixed greens, arugula or baby kale
For Vinaigrette:
1/4 cup olive oil
1/4 cup lemon juice
2 tsp. dijon mustard
2 tsp. honey, agave nectar or maple syrup
1 small clove garlic minced sea salt and black pepper
In a small bowl whisk the olive oil, lemon juice, dijon, honey and garlic until well blended. Prepare both oranges by cutting off the rind and outer membrane and slicing into wedges. Place greens in a big salad bowl and add the oranges, avocados and cashews. Toss with just enough dressing to coat. Season with sea salt and freshly ground black pepper to taste.
