Pistachio Artichoke Hummus
If you’re like me, you may have consumed an entire bowl of hummus at one time or another?
I know. It’s just that good.
Hummus is a healthy, delicious dip and super easy to make at home. It’s just a combination of a few standard ingredients, starting with a can of chickpeas. But if you want to take your average hummus to the next level, try some tasty and healthy mix-ins. For a dip with a sophisticated flavor, you could add sun-dried tomatoes, roasted red pepper, rosemary-infused olive oil or Sriracha sauce. Or for a more simple upgrade, how about fresh herbs, garlic, or lemon zest!
The spin on hummus that I am currently loving, features an unlikely nut, the pistachio.
Here’s the scoop: I’ll admit I was a little afraid of taking my first bite not knowing if pistachios + artichoke would be a good match.
But it was just crazy delicious.
Isn’t healthy beautiful? Why yes, it is.
Pistachio Artichoke Hummus recipe
Loaded with dietary fiber and healthy protein, you could pair this little beauty with pita, veggies or use as a sandwich spread.
- One 15oz can garbanzo beans, drained and rinsed
- One 12oz marinated artichokes, drained
- 1/2 tsp pepper
- 1/2 tsp salt (more to taste)
- 1/2 cup roasted or raw, unsalted pistachios (shelled)
- juice of one lemon
- extra virgin olive oil
Pour the pistachios into a food processor or high speed blender. Blend until pistachios are crushed. Add the garbanzo beans, artichokes and the juice of on large lemon. Process until all ingredients are blended and smooth. If you need more liquid, add one tablespoon of olive oil or some more lemon juice! Add salt and pepper to taste. Place hummus in a large bowl and drizzle with olive oil and top with a few pistachios.
