Sweet & Spicy Black Bean Salad

Or is there is something so incredibly comforting about a meal filled with beans, fresh veggies and a flavorful dressing? While I have a pretty standard recipe for black bean and avocado salad sometimes it’s a good thing to switch things up a bit. This 15-minute salad starts with a base of fiber-packed black beans that gets gently tossed with antioxidant packed red bell pepper, crunchy celery, spicy jalapeño, creamy avocado and cleansing fresh cilantro. Corn adds a subtle sweetness and the lime dressing ties it all together.
Borderline dressing perfection.
This makes the perfect weeknight meal when you’re craving something quick and healthy. Bonus? It will also please plant based and non-plant based eaters alike and leftovers make a great lunch the next day.

Sweet & Spicy Black Bean Salad
2 15-ounce cans black beans, rinsed and drained
1 1/2 cups corn, fresh or frozen (cooked)
1 cup celery, chopped
1 cup red bell pepper, diced
1 medium fresh jalapeno pepper, seeded and minced
1/2 cup fresh cilantro, minced
1/3 cup red onion, diced
1 large avocado, cubed
Dressing:
1/4 cup lime juice
1/4 cup olive oil
1 tbsp. maple syrup or honey
1 tbsp. Dijon mustard
1/2 tsp each salt & pepper
To garnish: red cabbage or lettuce
For dressing: combine lime juice, olive oil, maple syrup, mustard, salt and pepper in a jar with a tight-fitting lid. Shake well until blended.
Mix beans, corn, celery, red pepper, jalapeno, cilantro, red onion and avocado in a bowl. Drizzle dressing over bean mixture and toss to coat. Cover and chill for 1 hour or up to 1 day. Arrange salad on a plate or bowl lined with red cabbage or lettuce leaves. Serve and enjoy!
