Cucumber Avocado Salad

Perfect when you are looking for an easy,  light meal!

Chickpea, Cucumber Avocado Salad
2 cups mixed greens
1 can (15 oz) chickpeas (garbanzo beans), rinsed and drained
1 medium cucumber, peeled and chopped
1 avocado, chopped
20 grape tomatoes, halved
1/4 cup red onion, diced
2 Tbsp. fresh parsley, finely chopped
2 tbsp. fresh lemon juice
2 tbsp. extra virgin olive oil
salt and pepper to taste

Combine all ingredients in a medium salad bowl and toss together.
