Zucchini Brownies
I think it is high time I share this recipe with you.
These brownies are downright delightful. Super moist, fudgey, and soooo chocolatey. Paired with fresh raspberries it just may be the best dessert ever.
Simple, yet decadent.
These brownies are the best way to use up zucchini from your garden and I promise you will never even know there is a vegetable lurking in your dessert. Plus, they take less than 10 minutes to whip up and require zero skill and no fancy equipment. Just toss all the ingredients together in one big bowl, mix and bake.
Downright decadent.
Zucchini Brownies
1 tbsp. ground flax seed
3 tbsp. water
1 cup creamy almond butter
1 1/2 cup zucchini (peeled and finely grated)
1/3 cup pure maple syrup
1/3 cup cocoa powder
1/3 cup organic applesauce
1 teaspoon organic vanilla extract
1 teaspoon baking soda
3/4 cup dark chocolate chips (optional)
Preheat oven to 350 degrees.
In a small bowl combine the flax seed and water and set aside. In a large mixing bowl, place all remaining ingredients and stir until well combined. Add flax seed and water mixture. Pour batter into an 8 x 8 glass baking dish. Bake at 350 degrees for 30 – 35 minutes or until well set and/or toothpick comes out clean.
