These recipes are a simple, easy take on two classic Halloween treats. Made from just a handful of ingredients, they can truly be enjoyed all year long.

In short, these recipes will make you happier and healthier.

I can’t say the same for candy corn…

Healthy Peanut Butter Cups

If you’ve ever read the packaging on a Reese’s Peanut Butter Cup, then you’ll know that the ingredients list is long. Luckily, that isn’t the case for this recipe! These delectable peanut butter cups are made from just a handful of simple ingredients, which makes this the perfect Halloween treat to satisfy a sweet tooth! 

Bottom Layer (chocolate)

1/3 cup organic creamy peanut butter

2.5 tablespoons melted unrefined coconut oil

1 teaspoon vanilla extract

3 tablespoons unsweetened cocoa powder

2 tablespoons maple syrup

Top Layer (peanut butter)

1/3 cup organic creamy peanut butter

2 tablespoons melted coconut oil

1 teaspoon vanilla extract

2 tablespoons maple syrup

Himalayan sea salt

Line a small muffin tin with 12 muffin liners and then spray with coconut oil cooking spray and set aside. In a medium bowl, stir all ingredients for the bottom layer (chocolate) together until smooth. Set aside. In another medium bowl, stir all ingredients for the top layer (peanut butter) together until smooth. Set aside. Scoop a heaping 1/2 tablespoon of the chocolate layer into each muffin cup. Repeat until you’ve filled 12 cups. Then, pick up the entire muffin tin and shake/tap it until the layer is set evenly. Repeat the same thing with the peanut butter layer, adding around a heaping 1/2 tablespoon on top of the chocolate layer. Pick up the entire muffin tin one more time and shake/tap it until your cups are even. Finally, sprinkle each cup with some Himalayan sea salt. Place the muffin tin in the freezer for 30 minutes or until firm. Store healthy peanut butter cups in the freezer to enjoy for later.

Snickers Chocolate Bark

When my clients are craving something sweet this time of year, yet they want to avoid a sugar crash, this homemade Snickers recipe is the perfect option. Not only does it taste amazing, but it’s also made with wholesome ingredients. Plus, you can easily customize it with your favorite add-ins!

20 Medjool Dates pitted (make sure that they are nice and soft!)

1/3 cup creamy organic peanut butter

1/2 cup raw peanuts

1 1/2 cups chocolate chips

1 tablespoon unrefined coconut oil

1 pinch flaky salt

Pretzels * (optional)

To make this bark, start by preparing the dates: slice the dates open and remove the pits. Then, smash them down and line them up on a parchment-lined baking sheet.

Then, use a spoon to drizzle the peanut butter over the dates, and top with the crushed peanuts.

Set the tray aside and add the chocolate chips and coconut oil to a small bowl.

Melt the chocolate by placing the bowl into the microwave and heating it in 2-3, 30 second increments, being sure to stir in-between.

Then, pour the melted chocolate on top of the date and peanut mixture, then refrigerate for one hour or freeze for 35 minutes, until the chocolate is set.

Once done, sprinkle with flaky salt, break apart, and enjoy! Store any leftovers in an airtight container, in the fridge, for up to one week.

*I know that pretzels are not a part of a snickers bar, however, I love the texture and contrast of sweet/salty that they bring to this recipe. If you should choose the use them, simply crush 1 cup of pretzels and layer on top of the dates with the peanut butter and chopped peanuts. Drizzle with chocolate and enjoy!
