3 Recipes with Fresh Blueberries!
When we are right in the middle of blueberry season, it’s time to make all the blueberry recipes.
Whether you are picking fresh blueberries at the local farms, grabbing a carton from the farmer’s market, or even substituting with a bag of frozen blueberries, I have rounded up 3 of my favorite recipes for when you are wondering what to make with blueberries.
Blueberry Overnight Oats
Overnight oats are a staple in our house, and while I love trying out different flavor variations, this recipe is our go-to favorite. Because it is THE BEST and THE EASIEST.
1/3 cup old-fashioned oats
1/4 teaspoon ground cinnamon
1 tablespoon chia seeds
1 tablespoon almond butter or peanut butter
1/2 cup milk of choice for a very thick consistency, or up to 2/3 cup milk for a lighter consistency (I use unsweetened almond milk)
1/2 cup blueberries
Drizzle of maple syrup or honey, if desired
In a jar or bowl, combine the old-fashioned oats, cinnamon, chia seeds. Add in the milk and mix the nut butter into the oats and stir to combine.
Top with your blueberries. Place the lid on the jar and refrigerate overnight, or up to 5 days. When you’re ready to serve, add a drizzle of maple syrup or honey if you’d like, and enjoy chilled.
This recipe makes 1 serving. I recommend doubling, or tripling since overnight oats get better as they sit in the fridge and make for a super quick breakfast.
Blueberry Spinach Salad
This healthy spinach blueberry salad recipe is made with goat cheese, walnuts, avocado, mint, and a simple balsamic vinegar dressing. It’s super quick to make, packed with flavor and nutrients!
4 cups baby spinach
2 cups fresh blueberries
1 cup raw walnuts
1 medium-large avocado (cut into chunks)
1/2 cup goat cheese (crumbled)
1/4 cup fresh mint (torn into small pieces)
Salt + pepper, to taste
Balsamic Vinaigrette:
1/4 cup olive oil
2 Tbsp balsamic vinegar
1/2 a lemon, juice only
1 tsp garlic powder (or 2 cloves fresh garlic, minced)
1 tsp maple syrup of honey
Salt + pepper, to taste
Make balsamic vinaigrette by adding all dressing ingredients into a small bowl or jar with a lid. Whisk or shake vigorously to combine.
Add all salad ingredients to a large serving plate or salad bowl. Pour dressing on top and toss to combine.
Serve + enjoy!
Viral Blueberry Yogurt Clusters
If you’re looking for a delicious, sweet, and healthy snack that is not only packed with protein, but is PERFECT to grab and go, then look no further because this recipe is IT! These Viral Blueberry Yogurt Clusters are a crunchy, creamy, and delicious snack that is perfect any time of day. They are made with just four simple and easy ingredients!
2 cups blueberries rinsed and dried
1 cup plain Greek yogurt
1 cup dark chocolate chips
1 teaspoon coconut oil
To make these clusters, start by washing your blueberries and drying them well, adding them to a bowl once they are cleaned.
Next, add your yogurt to the bowl and toss until the blueberries are fully coated in the yogurt.
Scoop your blueberries into 6-8 scoops and place them onto a parchment paper lined baking sheet and freeze for 20 minutes.
In a separate small bowl, add your chocolate chips and coconut oil and melt in 2, 30-second increments in the microwave until it’s completely smooth. Be sure to mix the coconut oil and chocolate in-between increments, so it combines together.
Once your chocolate is melted, remove your tray of blueberries from the freezer and dip each cluster into the chocolate. The chocolate will form a shell on top of each one!
Add a sprinkle of sea salt or coconut flakes if desired, then eat and enjoy! Store any leftovers in the fridge for up to one week.
