Creamy Pumpkin Pasta with Fried Sage
It’s officially pumpkin season!
I thought it was about time to whip up a creamy, dreamy pumpkin pasta. This one-pot wonder defines comfort food, requires just a few ingredients and comes together in under 15 minutes. It is the perfect meal to make if you’re craving something hearty yet healthy this fall and while a complete winner on it’s own, it also pairs well with a simple arugula salad and oven roasted root vegetables.

I promise this dish will light up your taste buds. It’s got an amazing sweet and savory thing going for it with a gentle heat thanks to the crushed red pepper flakes. Plus, it tastes super decadent and creamy despite the fact that there’s no actual cream involved. I highly recommend topping each plate with plenty of crumbled crispy fried sage.

Creamy Pumpkin Pasta
12 oz. spaghetti
4 cups good quality vegetable broth
1 cup pumpkin puree
1/2 cup canned full-fat coconut milk
3 cloves garlic, minced
1 cup, finely chopped onion
1 tbsp. olive oil
salt and pepper
Garnish with:
2 Tbsp. olive oil
12 sage leaves
Red pepper flakes
Parmesan or vegan Parmesan
Add your spaghetti, vegetable broth, pumpkin puree, coconut milk, garlic, onion, and olive oil in a large pot. The pasta will be sticking out of the liquid for now but as soon as it starts to soften, you can gently push it into the liquid. Bring the mixture up to a boil over medium-high heat. Lower the heat to medium, vent the lid, and cook for an additional 10-12 minutes, stirring frequently. You’ll want to cook it until most of the liquid has been absorbed and the noodles are cooked al dente.
Meanwhile, make your fried sage. Heat olive oil in a small saucepan over medium heat. Add sage leaves and fry until crispy. Immediately remove the leaves from the pan and place them on a paper towel-lined plate to drain. When your pasta is done, season with salt and pepper to taste. Top with and crumbled fried sage, Parmesan and red pepper flakes.
