Blueberry Spinach Salad with Honey Balsamic Dressing

Just say NO to boring salad.

I have the yummiest, heartiest, simplest salad recipe to share with you today. It’s full of tender spinach, crunchy broccoli, creamy avocado, fresh wild Maine blueberries, crispy red onion, dried cranberries, toasted walnuts, tangy goat cheese, all tossed together in my favorite easy honey balsamic dressing.  And I’m telling you, there is something about this particular combo of tangy and creamy, sweet and savory, light and hearty that just completely hits the spot.

Texture and crunch factor for days.

As with all salads you should feel free to use this recipe as a template and tweak it to suit your personal tastes/mood/what you have hanging out in your fridge or pantry.

  • Add in protein: Some chickpeas, tofu or tempeh would be delicious mixed in
  • Swap out the greens: You could always use arugula, kale, or mixed greens
  • Swap out the nuts: You could use sunflower seeds, pumpkin seeds, pecans or pistachios
  • Swap out the cheese: You could use feta, sharp cheddar, or Parmesan
  • Make it vegan: Just nix the cheese, and feel free to add in a sprinkle of nutritional yeast or vegan cheese, if you’d like.

The sky’s the limit with this little gem.

Blueberry Spinach Salad with Honey Balsamic Dressing

4 cups fresh spinach
1 cup broccoli, chopped
1 avocado, diced
1/2 cup walnuts, toasted and chopped
1/2 cup dried cranberries (I use the no sugar type)
1/2 cup goat cheese, crumbled
1/2 cup fresh wild Maine blueberries
1/4 diced red onion

Honey Balsamic Dressing
2 tbsp avocado oil (or olive oil)
1 tbsp honey
2 tbsp balsamic

Toss all salad ingredients together. To make the dressing, add all dressing ingredients to a mason jar and, with the lid on tight, shake well. Serve immediately.
