Chipotle Pumpkin Chili

I’m not exaggerating when I say this is my favorite chili.

This hearty vegetarian chili is a satisfying meal that you’ll feel good about eating every day of the week (which you’ll want to). It is so hearty with seasonal pumpkin for body and creaminess that is accented with spicy, smoky chipotle peppers. Topped with fresh cilantro, crunchy green onion, and jalapeno, Chipotle Pumpkin Chili absolutely crushes it in the healthy comfort food category.

In addition to being nutritious and delicious, Chipotle Pumpkin Chili is a simple one-pot meal. After sauteing the onion and green pepper, you just throw everything in a pot on the stove and let the magic happen. (You could also simmer this on low in a slow-cooker while you’re working and have an instant dinner feast.) This chili actually tastes even better the next day, which means that you can easily make it in advance, and you’ll be thrilled with the leftovers.

A warming, full-on flavored dinner ready in under 30 minutes.

Chipotle Pumpkin Chili

1 tbsp. olive oil
1 cup finely diced white onion
1 cup finely diced green bell pepper
5 large garlic cloves, minced
1 tbsp. chili powder
1 tsp. cumin
1 tbsp. minced chipotle peppers in adobo sauce (or more for additional heat)
1 1/2 cups tomato puree
1 1/2 cup vegetable broth
3/4 cup pumpkin puree
Three (15 oz) cans of beans, drained & rinsed (1 can each of black beans, pinto beans and kidney beans)

Garnish with: cilantro, onion, jalapeno, avocado, lime, tortilla chips, vegan (or regular) sour cream and shredded cheese

Add olive oil to a large pot with the onion, green pepper and garlic over medium-low heat and cook about 6-8 minutes until the onions and green pepper are soft. Get your remaining spices and ingredients ready while the onions and peppers are cooking. Add the chili powder, cumin, chipotle peppers and tomato sauce. Cook, stirring constantly for about 1 minute. Add the remaining ingredients and stir well, bring to a boil and then lower the heat to a simmer, cover and cook for about 20-25 minutes until thickened and the flavors have deepened. If you’d like it thinner, add a tiny bit more broth or water. Taste and add any more salt if needed or more chipotle if you’d like it spicier. Serve with your favorite garnishes. Enjoy!
