Creamy Asparagus Soup (vegan)
This is a pot of creamy goodness, friends!
For the record, I plan to make this magical soup at least once a week over the coming months. Its warm coziness is perfect for the current 30 degree conditions, yet it’s still light enough to serve as a spring meal. Perhaps the most exciting aspect of creamy asparagus soup is that it absolutely crushes it on the health front. In short, this soup will boost energy levels, stabilize blood sugar, and improve heart health.
If you’ve never had asparagus soup, you’re in for a serious treat.
Don’t worry, it’s super quick and ridiculously easy to pull off. All you need to do is roast some asparagus, sauté some onions and garlic, and then add a little almond milk and veggie broth, some green peas, salt & pepper and blend. Let the goodness simmer for ten minutes, add some nutritional yeast if you like, and BOOM. You’re done!
Spring is almost here. Keep calm and carry on.
Creamy Asparagus Soup
Olive oil
12 ounces (1 large bundle) asparagus, trimmed
10 ounces (about 2 cups) fresh or frozen peas
2 cloves garlic, minced
1 small onion, chopped
Salt + Pepper
1 1/2 cups unsweetened plain almond milk
1 1/2 cups vegetable broth
1-2 Tbsp nutritional yeast (optional)
1/2 lemon, juiced
Preheat oven to 425 degrees and spread asparagus on a bare baking sheet. Drizzle with olive oil and season lightly with salt and pepper. Toss to coat. Roast for 12 minutes, then set aside.
Heat a pot over medium heat. Once hot, add 2 Tbsp oil and onion and garlic. Season lightly with salt and pepper and stir to coat. Cook for 2-3 minutes or until fragrant and translucent. Reduce heat if garlic begins browning. Add peas, vegetable broth and almond milk and season with salt and pepper once more.Transfer soup to blender along with asparagus. Blend soup until creamy and smooth. Transfer back to pot and bring to medium heat and simmer.
Add nutritional yeast if using and whisk. Continue cooking until warmed through and simmering, then reduce heat to low. Taste and adjust seasonings as needed, adding more salt and pepper if desired. Remove from heat and add lemon juice. Enjoy!
