Holiday Granola
This year, I chose to give the gift of holiday granola to the many people that I adore.
Why granola? Well, first of all, why not?
slightly sweet + crunchy + coconut = good enough to eat plain by the handful. you get me.
And may I make a gentle suggestion?
If you are able to carve out just one hour, make this granola for all those people you cherish (and possibly follow this up with a lovely glass of wine with your loved one…)

Coconut Pecan Cranberry Granola
4 cups rolled oats
1 cup coarsely chopped raw, pecans
1 cup chopped almonds
1 cup dried cranberries or dried cherries
1 cup unsweetened shredded coconut
1 tbsp ground cinnamon
1/2 tsp salt
1 tsp vanilla extract
4 tbsp coconut oil
1/3 cup pure maple syrup
1/2 cup ground flaxseed
Heat the oven to 325F. In a large bowl, combine the oats, nuts and cinnamon. Mix together well. In a small saucepan, combine the coconut oil, maple syrup salt, and vanilla. Warm on low heat and stir until well combined and coconut oil is melted. Pour the liquid mixture over the dry mixture and stir until well combined and everything is evenly and thoroughly coated. Spread the granola evenly onto two baking sheets lined with parchment paper, and place in the oven. Bake for about 25 minutes, stirring it around every 10 minutes. Remove from the oven and let the granola cool completely. Add in the cranberries, shredded coconut and flaxseeds. Store it in an airtight container and enjoy!
