Maple Apple Granola
This granola is, in a word, delightful.
Everyone knows granola is super delicious, but this one is off-the-charts amazing, and it’s ridiculously easy to pull-off. All you have to do is toss a mixture of oats, walnuts, flax seeds, and apples with some coconut oil, maple syrup, vanilla and just the right amount of cinnamon until lightly coated. Then spread the mixture onto baking sheets and pop it in the oven for about 40 minutes until it turns a beautiful shade of golden brown.
This stuff is seriously the best.
Maple Apple Granola is fabulous on it’s own, but the topping is what may really rock your world here. Coconut milk adds the perfect finishing touch, making each bite an epic combination of creamy, nutty, fruity goodness with an irresistible crunch. This simple recipe will not only make you feel all domestic, it will also make your kitchen smell amazing.

Maple Apple Granola
3 small apples, cored and finely chopped
2 cups rolled oats
1 cup raw walnuts, chopped
1/4 cup ground flax seed
1 tsp cinnamon
1/3 cup melted, unrefined coconut oil
1/2 cup pure maple syrup
1 tbsp. vanilla extract
optional: coconut milk for serving
Preheat oven to 325F. Place chopped apples, oats, almonds, ground flax seed and cinnamon in a large baking sheet and mix together. In a bowl, add the melted coconut oil, maple syrup and vanilla and stir to combine. Add the coconut oil mixture to the oat mixture and thoroughly mix together all ingredients.
Place in the oven and bake for 30 minutes, tossing with a spatula to break up any large chunks. Place back in the oven and bake for another 10-15 minutes, until granola is mostly dry and light brown. Toss the granola once more with the spatula and let it cool completely on the baking sheet before storing or serving. Enjoy!!!
