No Bake Peanut Butter Breakfast Bars
These bars are everything you want in a breakfast.
Oats, flaxseeds, pecans, peanut butter, coconut flakes and maple syrup are tossed with cinnamon, and then refrigerated for just 30 minutes. The bars are nutty and cinnamon-y with a light maple glaze and a hint of salt, which strikes the perfect balance of sweet and savory. Plus, it has just the right amount of crunch, and if nothing else, these bars are worth making simply based on how easy and portable they are. Just make a batch on a Sunday and and then eat all week long.

But the best part about this recipe is that it’s bursting with health benefits. First of all, I used maple syrup which is impressive when it comes to supplying protective antioxidants. Next, you’ve got flaxseeds, which are tiny superfoods packed with omega-3 fats and fiber. These seeds are praised for their ability to boost energy, lower cholesterol, regulate appetite and improve mood, which is good news for all. In addition, these bars also have plenty of protein and healthy fat from the peanut butter and pecans.
Long story short, eating these bars will make you happy & energetic.
No Bake Peanut Butter Breakfast Bars
2 cups old fashioned rolled oats
1/2 cup ground flax seed
1/3 cup shredded unsweetened coconut
1/2 cup chopped pecans
3/4 cup organic creamy peanut butter
1/2 cup pure maple syrup
1/2 teaspoon of ground cinnamon
1/4 teaspoon of salt
In a large bowl add oats, ground flax seed, unsweetened coconut, salt, and ground cinnamon. Bring a small saucepan to medium heat and add peanut butter and maple syrup, melt peanut butter and continue to stir until combined and melted. Pour peanut butter mixture over oats, stir to combine. Let cool for 2-3 minutes. Place oat mixture in a 8×8 pan lined with parchment paper and very firmly press the mixture down until flat. Cover and place in refrigerator for 30 minutes. Cut bars into individual servings and keep in the refrigerator for 7-10 days or the freezer for up to three months.
