Pesto – my favorite recipe
Oh, how I am enjoying summer. It just tastes SO GOOD.
Now. Say hello to my new favorite pesto. I’m loving this to the point of eating it by the spoonful and dipping any (and every) vegetable into it. This pesto has little bits of crunchy pistachios, bright and flavorful notes of basil, creamy avocado, and sweet and salty miso.
All the ingredients come together for your happiness.
This pistachio pesto is amazing served alongside roasted vegetables. You can also spread it on crusty bread as an appetizer, or toss with your favorite pasta to serve as an entrée or side dish.
And not only is it tasty, it’s good for you.
The pistachios give this an extra punch of nuttiness, rendering the typical Parmesan addition pretty unnecessary. Sure you could add it if you like, but I promise you won’t even realize it’s missing. So if you’re looking for a recipe that’s easy yet extremely satisfying and can wow anyone that joins you for dinner, this one is a sure bet.
Pure flavor doesn’t get any better than this.
Pistachio Pesto
1/2 cups shelled, raw (unsalted) pistachios
1 small clove garlic, minced
1 tbsp. miso
1 cup fresh basil, lightly packed
juice of 1 medium lemon
1/2 avocado, diced
Chop pistachios into small pieces in your food processor. Add remaining ingredients and process until you reach your desired consistency.
