Strawberry Avocado Salad with Lemon-Dijon Dressing

I thought I’d whip up my favorite seasonal salad today.

So, without further ado, I give you this gorgeous meal that starts with a big nest of tender local arugula, which is a green I adore. It’s distinct peppery flavor balances the sweetness of the strawberries perfectly. Then creamy avocado gets added into the mix, along with the juiciest fresh summer strawberries, and spicy sliced red onion. Crumbled local goat cheese is sprinkled on top for a little added creaminess and tang, and the end result is a tender, seasonal, hand-tossed salad with layer upon layer of fresh flavors and textures.

There’s more! I loved this salad as is, but I bet it would be equally delicious with the addition of handful of cooked quinoa and fresh basil for a heartier option. If I had any pistachios at home when I made this, I would have tossed in a handful of them as well. I know your family will love the fresh, bright flavors and new take on a classic salad.

Strawberry Avocado Salad with Lemon-Dijon Dressing

Salad
6 cups lightly packed baby arugula
10-12 strawberries
1 avocado
1/2 a medium red onion, thinly sliced
4 oz. goat cheese or cashew cheese, crumbled (my go-to brand of cashew cheese is Nuttin’ Ordinary)

Lemon-Dijon Dressing:
2 tbs. fresh lemon juice
1 tsp. finely minced shallot
1-1 1/2 tsp. honey (preferably raw & local)
1 tsp. Dijon mustard
6 tbs. extra virgin olive oil
Salt and pepper

For Salad:
Thinly slice avocado, red onion, and strawberries. Divide arugula into 4 serving bowls, or build one large salad to share. Top arugula with all salad ingredients, and a drizzle of vinaigrette. Gently toss to combine.

For Lemon-Dijon Dressing:
In a small bowl, whisk together all ingredients except the olive oil. Add the oil in a slow, steady stream, whisking constantly. Season with salt and pepper.
