Sweet Potato & Broccoli Melts

These are little bites of HEAVEN.

Most of you are familiar with my feelings about sweet potatoes, but in case you’re new here, it’s my second greatest food love (after leafy greens), and this particular version is quite stellar. The combination of sweet caramelized potatoes and crunchy garlic infused broccoli is straight up delightful, and that’s before you melt creamy cheddar on top. I know what you’re thinking, and you’re right.

It is delicious insanity.

If you’ve yet to hop on the sweet potato “toast” wagon, you’re gonna want to join the party. Roasted sweet potato planks are an amazing vehicle for your favorite toppings, and they’re also a fabulous option for the gluten-free, Whole 30, and paleo friends. Plus, it couldn’t get any easier (slice, oil, roast), and 20 minutes is a small price to pay for the deliciousness.

Trust me on this one.

Sweet Potato & Broccoli Melts

2 large sweet potatoes
2 tablespoon olive oil (divided)
1 head broccoli, florets removed and chopped (about 2 cups)
2 cloves garlic, minced
1 cup shredded organic cheddar or vegan cheese
Salt and pepper
Hot sauce (optional)

Preheat oven to 425 degrees F. Wash sweet potatoes well and slice sweet potatoes into 1/4-inch slices. Discard the ends so you just have nice full toasts. Place on a baking sheet lined with parchment paper and drizzle with 1 tbsp. olive oil and a pinch of salt. Roast sweet potatoes for about 20 minutes until they are starting to get browned on the edges and soft. While sweet potatoes are cooking, place remaining olive oil in a large saute pan. Add broccoli until cooked but still slightly crunchy. Add garlic and saute for another 2-3 minutes. Top cooked sweet potatoes with equal amounts of broccoli and cheese and place back into the oven to cook until cheese melts and bubbles, about 3-4 minutes. Add a splash of hot sauce if desired.
