Thai Noodles with Peanut Sauce

Well, it’s still winter.

This beauty, like most of my favorite recipes, was born from the need to clean-out-the-fridge so that I didn’t need to leave my house on a frigid afternoon to push a grocery cart through slush. And I must admit this version of Thai noodles far exceeded my expectations on their own, but once I got a little fresh lime juice, peanuts, cilantro, and a sinus-clearing amount of hot sauce involved?

Unbelievable.

These comforting and convenient noodles come together in about 20 minutes from start to finish and given the one-pot element, there’s minimal cleanup. In addition, they taste indulgent but happen to be loaded with fiber, protein, and antioxidants and I’m also thrilled to inform you that these noodles can be served warm, room temperature or cold, and will keep well in the fridge for 3-4 days making them a gorgeous choice for your weekly meal prep.

Thai Noodles with Peanut Sauce

5 cups fusilli (or your favorite pasta)
pinch sea salt
1-2 tbsp sesame oil
1 cup purple cabbage shredded
1 cup carrots grated
4 green onions chopped
1/3 cup peanuts chopped
1/3 cup cilantro chopped

For the Peanut Sauce
1/4 cup + 2 tbsp all-natural peanut butter (or almond butter)
1/4 cup water
3 tbsp rice vinegar
2 tbsp tamari
2 tbsp maple syrup
1 tbsp sesame oil
1 clove garlic
1/4 tsp cayenne pepper

Garnish: hot sauce and a squeeze of fresh lime juice (optional)

In a large pot bring water to boil. Add a generous pinch of sea salt and pour in pasta. Cook pasta until just al-dente.
 Strain pasta and rinse with cold water. Place back in pot, drizzle with sesame oil and stir gently. Cover with a tea towel and let cool. 
In a large mixing bowl add shredded cabbage, carrots,and onions. Add cooked pasta. Prepare peanut sauce in a small bowl by whisking together peanut butter, water, rice vinegar, tamari, maple syrup, sesame oil, garlic and cayenne.
 Pour peanut sauce over pasta salad and mix gently to combine. Sprinkle with green onion, peanuts, and cilantro. Mix again.
