Pumpkin Chipotle Chili

A full-on flavored meal.

I’m pleased to report that this chili is a weeknight wonder. In addition to being incredibly filling and delicious, Pumpkin Chipotle Chili is a simple one-pot meal. After chopping onions & peppers, you just throw everything in a pot on the stove and let it works its magic. You could also simmer this on low in a slow-cooker while you are at work and come home to an instant dinner.

I love all things pumpkin. Always have. Which is the main reason I added it to this chili. Besides adding a silky texture and a sweet nutty flavor to the chili, pumpkin is an amazing source of fiber and vitamin A, which boosts the nutritional content of this meal. Feel free to get creative and garnish each portion with a variety of toppings: tomatoes, green onion, cilantro, avocado, jalapeno, lime, tortilla chips, chopped cilantro.

Pumpkin Chipotle Chili

1 tbsp. olive oil
1 onion chopped
2 cloves garlic minced
1 red bell pepper, chopped
1 green pepper, chopped
1 can pumpkin puree (15 ounces)
1 can fire-roasted tomatoes (15 ounces) diced with their liquid
2 cups vegetable broth
1 can pinto beans (15 ounces) with their liquid
1 can black beans (15 ounces) with their liquid
1 cup corn, fresh or frozen
1 tbsp. adobo sauce from a can of chipotle chiles (more if you like it spicy)
1 teaspoon chili powder
1 teaspoon ground cumin
salt to taste
pepper to taste

In a large pot over medium heat, saute the onion until slightly translucent. Add the garlic and bell pepper and saute until the bell pepper starts to soften. Add the remaining ingredients and stir to combine. Cover the pot and simmer for 20 minutes over low heat, stirring occasionally. Allow the chili to rest covered for 5 minutes before serving. Serve with lime wedges, cilantro, avocado, chopped tomatoes, onions, tortilla chips, etc. Enjoy!
