10-Minute Curried Cauliflower Rice
Cauliflower “rice” is hot right now.
In part because cauliflower rice can be enjoyed by pretty much anyone, regardless of whatever fancy program they happen to be following (paleo, gluten-free, plant-based, keto) but most likely because it’s ridiculously easy to make. There’s less than 10 minutes of actual cook time and this entire masterpiece only requires one pan, so you will literally have 2 minutes of clean-up.
A weeknight game changer.
If your health is a priority for 2020, you’ll be pleased to know that the health benefits of cauliflower fried rice are off the charts. First of all, cauliflower is detoxifying, high in fiber, and packed with vitamins and phytochemicals. On top that, you’ve got the anti-inflammatory and antioxidant properties of curry, and the coconut oil boosts immunity and has been shown to help balance cholesterol levels. In addition, this “rice” also re-heats surprisingly well in case you’re in the market for dinners that will double duty as lunch.

10-Minute Curried Cauliflower Rice
½ cup sliced almonds, toasted
4 cups frozen riced cauliflower
1-2 tbsp. coconut oil
1 yellow onion, chopped
3 cloves garlic, minced
1 Tbsp. + 1 tsp. curry powder
¾ tsp. sea salt or to taste
½ cup currants (or raisins)
½ cup chopped fresh cilantro
Heat coconut oil in a large skillet over medium heat. Add onions and sauté for 3-4 minutes, until they begin to soften. Add garlic, cauliflower, curry powder, and salt and cook for an additional 4-5 minutes, stirring frequently. Remove from heat and stir in almonds, currants, and cilantro.
