15-Minute Caprese Naan Pizza

This is the kind of meal I plan to enjoy all summer long.

It’s not fussy, it’s simple to make, and it tastes delicious.

Naan bread gets topped with fresh mozzarella, juicy ripe tomatoes, fragrant basil, and when paired with a simple green salad it makes for a quick, yet impressive meal.

Pizza night has never been easier.

So whether you’re making pizza for Father’s Day or a quick weeknight meal, this recipe is your new best friend.

Just FYI, when sliced, these pizzas also make for an amazing appetizer for any and all casual get-togethers, including summer soirées, basketball/sports hangs, and random pizza parties.

We should all have more random pizza parties, no?

15-Minute Caprese Naan Pizza

4 naan breads*

1 (8 oz) mozzarella cheese, grated (vegan if preferred)

1 (8 oz) package small fresh mozzarella pearls, torn in half

3 garlic cloves, minced

2 Tbs. extra-virgin olive oil

1/4 cup thinly sliced red onion

4 small to medium local tomatoes on the vine, thinly sliced

Coarse salt

To garnish: Parmesan cheese and fresh basil leaves

Preheat your oven to 400.

In a small bowl, combine the grated mozzarella, the 2 Tbs. of oil, minced garlic and a small pinch of salt. Stir until combined and glossy.

Sprinkle the cheese mix evenly over each of the naan bread. Arrange the tomato slices on top of the cheese, followed by the thinly sliced red onion and a few mozzarella pearls.

Bake for 15 minutes (depending on your oven) until the cheese is browning and bubbly.

Garnish with parmesan and a scattering of fresh basil leaves. Slice and serve immediately!

Makes four naan pizzas.

*What is Naan? Naan is flat-like, yeast leavened, oven baked bread. It originates from Iran and Central Asia. It’s a very popular bread in India, where you’ll usually find a slightly thicker variation. I typically purchase the 365 Tandoori Naan Bread from Whole Foods but you can also find naan bread in most grocery stores.
