Five Ingredients. One Very Good Idea.

A Little Bit of Bittersweet

The Halloween candy was purchased for the children. That was the plan, anyway.

Somewhere along the way, the miniature chocolate bars started turning up with morning coffee, after lunch, and while deciding what to make for dinner.

Halloween hasn’t even come around, and already the candy bowl is looking a little depleted.

And those fun-size wrappers. Whoever decided that was an accurate description clearly wasn’t counting.

I’m not suggesting we give up Halloween candy. Let’s be reasonable. But a little variety never hurt anyone.

Consider dark chocolate bark: good bittersweet chocolate, tart cranberries, crisp pretzels, pumpkin seeds, and a finishing touch of flaky sea salt. Sweet, salty, a little tart, with just the right amount of crunch.

It’s easy to make, lovely served alongside a cup of tea or after dinner, and just as nice wrapped in parchment to give to a friend.

Melt the chocolate, scatter the toppings, and let the refrigerator take it from there. Very little effort for something that looks as though you’ve been up to considerably more.

As for the Halloween candy, enjoy it. There’s no need to turn a chocolate bar into a character assessment.

But if you’re going to eat chocolate, you might as well sit down and enjoy it.

Easy Dark Chocolate Bark with Pretzels, Cranberries & Pumpkin Seeds

Prep time: 10 minutes
Chill time: 45–60 minutes
Total time: About 1 hour
Yield: 12–16 pieces

Ingredients:

  • 12 ounces good-quality dark chocolate, roughly 60–70% cacao, chopped
  • 1 cup mini pretzels, lightly broken into pieces
  • ⅓ cup dried cranberries
  • ⅓ cup raw or roasted pumpkin seeds (pepitas)
  • ½ teaspoon Maldon flaky sea salt, or to taste

Instructions:

1. Prepare the pan. Line a rimmed baking sheet with parchment paper.

2. Melt the chocolate. Place the chopped chocolate in a microwave-safe bowl. Microwave in 20–30-second intervals, stirring well between each, until smooth. Avoid overheating.

3. Spread the chocolate. Pour the melted chocolate onto the prepared baking sheet and spread into an approximately ¼-inch-thick rectangle.

4. Add the toppings. Scatter the pretzel pieces, dried cranberries and pumpkin seeds evenly over the chocolate. Gently press the toppings into the surface so they stick.

5. Finish with salt. Sprinkle the Maldon sea salt over the top.

6. Chill and enjoy. Refrigerate for 45–60 minutes, or until completely firm. Break into rustic pieces or cut into bars and serve.

Storage: Store the bark in an airtight container in the refrigerator for up to two weeks. Keep it cool and dry to preserve its texture and freshness. Let it sit at room temperature for a few minutes before serving for the best flavor and texture.

A Little Nutrition Perspective

Dark chocolate offers more than its rich, bittersweet flavor. It contains magnesium and antioxidant compounds, while pumpkin seeds bring their own dose of magnesium, along with plant-based protein and healthy fats. Together, they’re a lovely reminder that food can offer both nourishment and enjoyment.
