Peach & Quinoa Lettuce Wraps

I don’t want to gush over this recipe, but these wraps are amazing.

Light, sweet, spicy, and packed with nutrients, they are literally little lettuce-wrapped flavor bombs. They are fancy enough to impress guests as an appetizer or main course at your next dinner party, yet simple enough for a weekday meal. The best part about these lettuce wraps is the convenience factor. They can be ready in about twenty minutes, and you’ll only need one pot, so you won’t have to devote more than five minutes of your precious time to cleaning up.

These beauties incorporate all the flavors of summer. I’ve folded in peaches, fresh basil, heirloom tomatoes, sweet corn, and served it wrapped in butter leaf lettuce because I love to eat with my hands. I garnished with avocado slices and feta, but those are just two potential toppings. Don’t be afraid to experiment with all creative additions and build your dream wrap.

Please note that these wraps play very well with a crisp white wine.

Peach & Quinoa Lettuce Wraps

1 cup quinoa, rinsed
1 1/2 cups vegetable broth
1 cup raw fresh sweet corn cut from the cob
1 cup diced peaches (or nectarines)
1 cup chickpeas, drained
1/4 cup green onion, finely diced
1/2 jalapeno with seeds, minced (more if you like spicy)
1 cup cherry heirloom tomatoes, halved
6-8 fresh basil leaves, chopped
1/4 cup extra virgin olive oil
Juice from 1 lemon
Salt and pepper to taste
For Garnish: Sliced Avocado & Feta (optional/I used goat feta)
Butter Leaf Lettuce for wraps

Bring vegetable broth to a boil in a saucepan. Add quinoa, bring back to a rolling boil, cover. Reduce heat to low and simmer until all liquid is absorbed about 12-15 minutes. Remove from heat and let cool. When cooled, fluff with a fork.

In a large bowl, combine all ingredients except for the feta and sliced avocado (reserve for topping). Toss and distribute evenly in lettuce wraps. Top with feta and avocado slices for garnish.
