Spring Tacos with White Beans, Red Potatoes, and Garlic Yogurt Sauce

There are tacos and then there are tacos.

Forgettable tacos are usually the kind that come out of a box, with a packet for seasoning and not much else. While there’s definitely a time and a place for this, they don’t do the taco any justice. These Spring Tacos with White Beans, Red Potatoes, and Garlic Yogurt Sauce are in a different league, friends. Just to break it down, warm tortillas are spread with a generous layer of a creamy garlic yogurt sauce then topped with a heaping portion of warm potatoes, seasoned white beans, crispy lettuce and cleansing radish. Each fully loaded bite is packed with so many amazing flavors and textures, it’s almost too much deliciousness to bear.

Denada.

And I’m thrilled to share that these tacos embody everything that I stand for. They are fancy, yet accessible. Impressive yet fool-proof. They are perfect for a weeknight meal or a casual spring/summer dinner party. They are also super healthy, pair nicely with a variety of cocktails and are 100% compliment worthy.

Plus, tacos just make people happy.

Spring Tacos with White Beans, Red Potatoes, and Garlic Yogurt Sauce

2 cups diced red potatoes (about 2 medium sized potatoes)
1 (15 ounce) can white beans, drained
1/4 cup extra virgin olive oil
1 1/2 teaspoons kosher salt, divided
1/4 teaspoon black pepper
1 tablespoon chopped fresh tarragon
1 teaspoon white wine vinegar
radishes, thinly sliced
Boston lettuce
corn or flour tortillas

Garlic Yogurt Sauce
3/4 cup plain Greek yogurt (or plain coconut yogurt )
2 tablespoons water
1 clove garlic, grated
1 tablespoon freshly squeezed lemon juice
1 teaspoon extra virgin olive oil
1/4 teaspoon kosher salt
pinch of cumin

Bring a medium pot of water to a boil. Add 1 teaspoon salt, then potatoes. Simmer for 8-9 minutes, until they are fork tender, but not falling apart. Remove from heat and drain. In a large bowl, mix them with the beans, olive oil, salt, pepper, tarragon, and white wine vinegar.  Let sit for 10 minutes. Meanwhile, make the garlic yogurt sauce by whisking everything together. Assemble tacos, spreading a thin layer of sauce on the surface, then adding lettuce, potato mixture, radishes and more yogurt sauce. Enjoy!
