Superfood Salad with Lemon Poppy Seed Dressing

If you celebrate Easter, there may be a brunch involved in which this delicious superfood salad will make a gorgeous centerpiece. You’re all aware of my love for a majorly loaded salad and I can assure you that this salad has a little something for everyone – it’s earthy, creamy, sweet and tangy. You could easily serve alongside salmon and a crowd-pleasing cocktail if you’d like.
Ultra-healthy and flavorful.
Piled high with kale, mango, berries, farro (or quinoa), avocado, walnuts, chia seeds and goat cheese this salad is chock full of vitamins, minerals and antioxidants that will have you feeling superhuman. The best thing about this salad is that it is very flexible in terms of ingredients. You can easily substitute different fruits, grains, greens, nuts and cheese to suit your personal taste. Don’t like mango? Try pineapple. Can’t stand kale? Mixed greens. No-go on the goat cheese? Use feta.

Superfood Salad with Lemon Poppy Seed Dressing
4 cups of packed kale or spinach
2 cups cooked quinoa or farro
2 cups mixed berries (raspberries, blueberries, blackberries, strawberries)
1 mango, peeled and sliced
1 avocado, diced
1/3 cup walnuts, chopped and toasted
4 ounces crumbled goat cheese
1 tbsp. chia seeds
Lemon Poppy Seed Dressing
½ Cup Olive Oil
3 Tablespoons Lemon Juice
1 Tablespoon Dijon Mustard
1 Tablespoon Poppy Seeds
1 Tablespoon Maple Syrup
Place all lemon poppy seed dressing ingredients in a clean jar, screw on the lid, and shake like crazy until mixed well.
In a large salad bowl, add kale and grains and add dressing tossing to coat. Pile on top mixed berries, mango, walnuts and goat cheese. Sprinkle with chia seeds and serve immediately.
