French Onion White Beans with Gruyère & Crispy Sourdough Crumbs

All the comfort of French onion soup, with creamy white beans, deeply caramelized onions, melted Gruyère, and golden, crispy sourdough crumbs.

There are certain dishes that make you want to cancel your plans and stay home for the evening. French onion soup has always been one of them.

It’s the deeply caramelized onions, rich savory flavor, and glorious layer of melted Gruyère. But sometimes a bowl of soup feels more like a starter than dinner.

Enter French Onion White Beans.

Creamy white beans soak up all that sweet, savory onion flavor, Gruyère melts into the mix, and crispy sourdough crumbs add just the right amount of crunch. It’s everything you love about French onion soup, reimagined as a satisfying skillet dinner.

And no, we’re not skipping the cheese. Some things are worth keeping.

Why I love this recipe

White beans are one of those kitchen staples that deserve a little more attention. They’re affordable, versatile, and naturally rich in fiber and plant-based protein. They also make an excellent foundation for a satisfying meal without a long list of ingredients.

Add sweet caramelized onions, nutty Gruyère, and a golden sourdough topping, and a humble can of beans becomes something rather special.

Make it a meal

Serve straight from the skillet with a crisp green salad and a simple vinaigrette. Good sourdough on the side is never a bad idea, either.

It’s an easy weeknight dinner, but lovely enough to serve to company. Bring the skillet to the table and let everyone help themselves. Just don’t expect the last of those Gruyère-covered crumbs to go uncontested.

A final thought

Eating well doesn’t mean giving up the foods that make you want to linger at the table. It means finding ways to bring flavor, satisfaction, and nourishment together.

And if that involves caramelized onions, Gruyère, and crispy sourdough crumbs? I think we’re doing just fine.

French Onion White Beans with Gruyère & Crispy Sourdough Breadcrumbs

Serves: 4
Prep Time: 10 minutes
Cook Time: 45–55 minutes

Creamy white beans meet slowly caramelized onions, melted Gruyère and golden sourdough breadcrumbs in this French onion-inspired skillet. It’s cozy, savory and just a little indulgent. Not your usual bean dish.

For the Beans

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • ¼ cup dry white wine
  • 1 teaspoon Dijon mustard
  • ½ cup vegetable broth, plus more as needed
  • 2 (15-ounce) cans cannellini beans, drained and rinsed
  • ¾ cup freshly grated Gruyère cheese
  • Salt and freshly ground black pepper, to taste

For the Crispy Sourdough Breadcrumbs

  • 1½ cups sourdough bread, torn or chopped into small crumbs
  • 1 tablespoon olive oil
  • ¼ cup grated Gruyère cheese
  • Pinch of fresh thyme
  • Freshly ground black pepper

Instructions

  1. Caramelize the onions. Heat olive oil and butter in a large oven-safe skillet over medium-low heat. Add the sliced onions and a pinch of salt. Cook for 35–45 minutes, stirring occasionally, until deeply golden, soft and caramelized. Don’t rush this step; the onions are where all that French onion flavor develops.
  2. Build the flavor. Add the garlic and thyme and cook for another minute. Pour in the white wine, scraping up any browned bits from the bottom of the skillet. Allow the wine to reduce slightly.
  3. Add the beans. Stir in the Dijon mustard, vegetable broth and cannellini beans. Season with salt and pepper. Simmer gently for 5–7 minutes until the beans are warmed through and the mixture is creamy.
  4. Prepare the breadcrumbs. In a small bowl, toss the sourdough crumbs with olive oil, Gruyère, thyme and black pepper.
  5. Finish in the oven. Sprinkle the remaining Gruyère over the beans, followed by the sourdough breadcrumbs. Transfer the skillet to a 400°F oven and bake for 10–15 minutes, until bubbling and golden. Broil briefly if needed for extra color.
  6. Serve. Finish with fresh thyme and serve warm.

Kitchen Notes

  • Take your time caramelizing the onions. This is what gives the dish its signature French onion flavor.
  • Use freshly grated Gruyère for the best melting texture.
  • If the beans become too thick, add a splash of vegetable broth.
  • Serve with a simple green salad or alongside roasted vegetables for a complete meal.
